Blueberries are a top natural source of pectin, a soluble  fiber that forms a slow digesting gel  in the gut.  This delays the release of sugar into the bloodstream to prolong satiety for three hours.  Pectin also binds to dietary fats in the digestive tract and shuttles them out of the body, blocking the absorption of up to 10  grams of fat per day.


Lowers cholesterol

USDA researchers recently discovered that the pterostillbene in those little blue wonders can slash LDL {bad cholesterol] by 29 percent and raise HDL {good} cholesterol by 7 percent.  Like prescription cholesterol meds, this antioxidant activates peroxisome poliferator-activated receptor alpha, a protein in cell nuclei that reduces levels of harmful lipids circulating in the bloodstream –but without the side effects.

Varicose vein relief

Regularly snacking on blueberries can improve the appearance of varicose veins and swelling in the legs by 80 % in as little as 10 days according to an Italian study.   That’s because  the berries are rich in anthocyanidins, bioflavonoids that strengthen collagen in vein walls and prevent the fluid backups that cause bulges.  And that’s not all : BioflAvonoids also quell the body’s inflammation that can make varicose veins look worse.

Photographic memory

A generous daily serving of blueberries can improve visual memory and speed recall ability by 50% in six days, report Greek scientist.  The credit goes to the fruit’s anthocyanins. These compounds stimulate neuron growth in the brain’s  hippo campus, which governs memory.  What’s more, blueberries contain a flavonoid called epicatechin that optimizes the flow of energizing oxygen to the brain.

I have blueberries about 3-4 times a week.  I highly recommend them especially for keeping the fat off around the middle. Amazing!
